
I made these amazing chocolate brownie, ice cream and berry cupcakes for pats birth day! you can use almost any baked good for the bottom part, just use the tin foil muffin cups fill it about halfway with batter, bake and let cool. Then instead of icing or frosting use your fave ice cream (softened) and fill the rest of the cup. Put them in the freezer for as long as you need and just give it a few mins before you serve to soften. I used heart breaker brownies for the bottom, vanilla ice cream, a layer of caramel in the middle, then rasberries and whipped cream as a topping! they were amazing and its great that you can have a batch in the freezer anytime! im thinking of trying some banana bread ones...mmmmm!
